I love vegetables, yellow, orange, red, green…
Green-wise I especially like Savoy cabbage, Brussels sprouts and leeks. But you can also use kale, chard, cavolo nero… Below are a few recipes showing what you can make with them.
Savoy cabbage & chorizo
add some slices of chorizo (best to use raw chorizo, but I have used cured chorizo) to a pan set on medium heat (you want the oil to leach out first rather than sear the slices).
finely slice and wash some greens, add to the pan. Add a small amount of vegetable stock to create some steam, put the lid on and cook for 10 minutes.
cook some potatoes in salted boiling water. Once tender (the cooking times will vary depending on the size of the potatoes but as a rule if a knife goes through easily then they’re ready) drain and let them steam while you prepare the second part of this dish.
slice some streaky smoked bacon and gently cook (you want the fat to cook out). note : I use the same pot the potatoes cooked in (saves on washing !)
add some finely sliced and washed greens and cook for a few minutes until soft.
add the potatoes back to the pot and start mashing (I use a masher, I like my mash rustic). liquid wise I use milk only but you can also use double cream, butter or a mix of the three.
