Easy muffins

I don’t particularly have a sweet tooth but sometimes I will want to diversify my breakfast a wee bit and will try something different.  I tried these a few weeks ago along with the butternut squash muffins and they’re a doddle to make – thanks to the foods processor.

 

113g yoghurt or apple compote

1 mashed banana

1 egg lightly beaten

80g oats

25g coconut sugar

3/4 teaspoon baking powder

1/4 teaspoon baking soda

put all of the above ingredients in the food processor and pulse until combined

then add 1/4 cup chocolate chips, combine and pour into a muffin pan.

bake for 20 minutes at 200C
