Healthy flapjacks

I love flapjacks, they’re great portable food that keep you full for long.

First combine the dry ingredients :

2 cups plain white flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon cinnamon (can be omitted if you don’t like the taste, but do try it!)

2 1/2 cups oats (old-fashioned or porridge, whatever you have on hand)

1/2 cup coconut sugar

in another bowl combine the wet ingredients :

284g made up of melted coconut oil + yoghurt (you can do half/half) – you can also replace the yoghurt with apple compote

2 eggs lightly beaten

1 tablespoon vanilla extract (you can make your own by putting a few vanilla pods in a small bottle of Gordon’s gin or vodka, let it sit for a few weeks and voila!)

 

stir the wet ingredients into the dry ingredients then add 2 1/2 cups of chocolate chips/chunks (I go for dark chocolate but you can choose milk chocolate)

 

tip into a square or rectangle baking dish (I use silicone baking dishes but I have used a high-sided baking tray before) and bake for 20 minutes at 180C.
